Lemon Bars - weightloss surgery friendly!

I Love these lemon bars.  They make me feel normal when I bring them to a party!  These are delicious.  I bought the maltitol powder, which is just like powered sugar here.  You can use this for pretty much anything powered sugar is used for.

Lemon Bars
I love lemon and this is a delicious no sugar version that is perfect to take to a holiday office party or family barbeque. Very tart with a buttery crust!

¾ cup plus 3 tablespoons all purpose flour
¾ cup almond flour
1 ½ cups Nature Sweet or Whey Low sugar replacer (Splenda, not so good, but do-able)
4 tablespoons butter
½ teaspoon baking powder
½ teaspoon table salt
1 teaspoon grated lemon zest
½ cup fresh lemon juice (about 2 lemons)
3 large eggs
Preheat oven to 350˚ and lightly coat an 8 inch square pan with cooking spray.

Pulse almond flour, all purpose flour, ½ cup of the Nature Sweet, and butter in food processor until mixture resembles coarse meal. Press into prepared pan and bake 18 to 20 minutes, until crust is golden and firm to the touch.

Combine remaining 1 cup Nature Sweet, 3 tablespoons flour, baking powder, and salt in a medium bowl. Add lemon juice, lemon rind, and eggs, whisking until smooth. Pour mixture over crust. Bake 14 to 16 minutes, until set. Remove from oven; cool in pan on a wire rack. Cut into 25 squares (5 x 5). Dust with additional Nature Sweet or Whey Low.

Makes twenty five, 1½ inch squares
